About me
Dr. Rita R. Jackson serves as State Coordinator for the Expanded Food and Nutrition Education Program (EFNEP) with the University of Tennessee Extension Service. EFNEP provides education to limited income families in the areas of nutrition, food safety, budgeting food dollars and food preparation. She has worked with the Extension Service for 28 years on the county, regional, and state levels starting with Mississippi State University Extension Service in 1997, then with the University of Tennessee Extension Service in 2002. She is happily married and has 2 sons ages 17 and 15.
